bell-view pasta salad

This pasta salad recipe features many different Bell-View products. They are all linked in the buttons below. We feature many different kinds of olives, pepper rings, condiments, and our honey. Try this for the 4th of July!



INGREDIENTS:

  • 1 box of Rotini pasta

  • 1 log of Salami

  • 1 package of Grape tomatoes

  • ½ can of Bell-View California Ripe Pitted Back Olives

  • 1 jar of Bell-View Hot & Sweet Pepper Rings 16oz.

  • ½ jar of Bell-View Queen Stuffed Olives 12oz.

  • 2 Bell peppers, chopped finely

  • 1 Package of mozzarella pearls

  • ½ cup Parmesean Cheese

  • 1 package of white cheddar cheese, cubed

  • 1 package of Colby jack cheese, cubed

  • 1 tsp. parsley

  • 1 tsp. basil

  • 1 tsp. oregano

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 11/2 cup Olive oil

  • 3 tbsp. lemon juice

  • 1 tbsp. Bell-View’s Spicy Brown Mustard

  • 1 tbsp. Tangy Horseradish Sauce

  • 3 tbsp. Bell-View Honey

  • 1 tsp. Red pepper flakes

RECIPE:

  1. Boil pasta: Cook pasta according to directions on package. Once cooked, drain and cool for 15 minutes.

  2. Prepare pasta salad ingredients: While pasta is cooking and cooling chop ingredients.

  3. Make Italian dressing: For the dressing whisk together olive oil, lemon juice, oregano, mustard, honey, garlic, red pepper flakes and season lightly with salt and then pepper to taste.

  4. Add pasta, veggies, and cheeses to bowl: Add cooled pasta to an extra large bowl along with salami, tomatoes, olives, bell peppers, red onion, mozzarella pearls, cheeses, parmesan, parsley and basil.

  5. Toss with dressing and pasta water: Whisk dressing once more then pour over ingredients in bowl along with 1/4 cup pasta water. Toss well to evenly coat.

  6. Add more if needed: Thin with more pasta water as desired and season with more salt as needed.

  7. Chill: It can be served right away or for a colder, more refreshing pasta salad, chill for 1 – 2 hours.
