Mother Marilyn’s Blueberry Muffins

This recipe features our new Mother Marilyn’s Blueberry Pancake & Waffle Mix. These muffins are hearty for breakfast but could also be enjoyed with a savory soup for dinner. The sweetness is subtle.

INGREDIENTS:

  • 2 1/2 cup Mother Marilyn’s Pancake & Waffle Mix

  • 1/2 cup milk

  • 2 tbsp butter, melted

  • 1/3 cup vegetable oil

  • 2 eggs

  • 3/4 cup sugar

  • 1/2 cup fresh blueberries

RECIPE:

  1. Grease or line muffin pan and preheat oven to 400 F.

  2. Combine pancake mix, eggs, sugar, milk, butter, and oil in a large bowl. This makes a thicker batter.

  3. Fill each muffin mold until 3/4 full. Press down into the mold.

  4. Press in a layer of blueberries on top. We used about 3 blueberries for each muffin. Make sure the blueberries are pressed into the muffin well.

  5. Bake for 12 minutes or until golden brown.
