Butter Bean Chicken & Cheddar Soup

This recipe features our Chopped Garlic and Savory Chicken Soup Base. This is an easy dinner recipe that took me about 30 minutes to put together.

INGREDIENTS:

Soup:

  • 2tbsp. olive oil

  • 1 large yellow onion, finely chopped

  • 4 shallots, finely chopped

  • 4 oz carrots, finely chopped

  • 1 tbsp. Bell-View Chopped Garlic

  • 4 oz Brocoli, finely chopped

  • 1 tsp. paprika

  • 1 tsp. black pepper

  • 1 tsp. Cinnamon

  • 4 cups of prepared Bell-View Savory Chicken Soup Base

  • 1lb. Rotisserie Chicken (can use diced/shredded chicken if preferred)

  • 2 cans of 15oz. Butter Beans

  • 1 cup cheddar cheese

  • 4 strips of cooked bacon, finely chopped

  • 1 bunch of fresh chives.

RECIPE:

  1. Heat the oil in a large stockpot over medium heat and add the onion, shallots, broccoli, and carrots. Cook for 6-10 minutes. Ad garlic, cook until fragrant.

  2. Add in butter beans and their juices. Cook for 5 minutes.

  3. Then add in prepared Savory Chicken Soup Base.Cook for another 10 minutes to simmer. Add cinnamon. While this is cooking, prepare your rotisserie chicken.

  4. In batches, blend together soup ingredients in a food processor and then ad back to the pot.

  5. Fold in 1 cup cheddar cheese.

  6. In a small frying pan, cook 4 strip of your favorite bacon. Once crisp, chop finely.

  7. Top soup with bacon, chives, black pepper, and paprika.

  8. Serve soup with crusty bread.
