PB and J Blondies

Bell-View’s Taste the Fruit 1st Preserves is perfect for your morning toast but did you know that it could also be used in baking? We’ve adapted this recipe to create a decadent dessert that’s sure to impress your friends and family!

INGREDIENTS:

  • ½ cup butter

  • ¼ cup creamy peanut butter

  • 1 cup light brown sugar 

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder

  • ¼ teaspoon kosher salt

  • 1 ¼ cups all-purpose flour

For the topping:

  • ⅓ cup creamy peanut butter

  • ⅓ cup of Bell-View’s Taste the Fruit 1st Strawberry Preserves 

DIRECTIONS:

  1. Take and grease an 8x8 inch baking dish and preheat oven to 350 degrees. 

  2.  Combine butter and peanut butter and melt in microwave for about 45 seconds. Add brown sugar to melted butter mixture and stir to combine then add egg, vanilla, baking powder and salt. Mix well.

  3. Add flour then mix until just incorporated.  Transfer mixture to the baking dish. Set aside. 

  4. In separate bowls, microwave Strawberry Preserves and peanut butter. Once melted, spoon it on top of the Blondie mixture. Swirl with a butter knife.

  5. Bake in 350-degree oven for 40minutes. Let cool.
