PB & J Ice cream sandwiches

Bell-View’s Taste the Fruit 1st Preserves is perfect for your morning toast but did you know that it could also be used for baking? We’ve adapted this recipe to make a decadent dessert that’s dangerous to keep around your house for too long! It’s sure to satisfy your sugar cravings!

Ingredients:

  • 1 1/2 cup all-purpose flour 180g

  • 1/2 cup butter unsalted, room temp 

  • 1 cup peanut butter 

  • 1/2 cup brown sugar, lightly packed

  • 1/2 cup sugar 

  • 1 tsp vanilla extract 

  • 1 egg large, room temp

  • 3/4 tsp baking powder

  • 1 Quart of Vanilla Ice Cream

  • 1 Jar of Taste the Fruit 1stStrawberry Preserves

     Instructions:

  • Let Ice cream melt naturally, add to container. 

  • Melt down Strawberry Preserves and add to the melted ice cream. 

  • Let set in freezer for four hours (until solid)

  • Preheat over to 350F

  • Mix all dry ingredients together. 

  • Cream butter and sugars together in a separate bowl then fold in peanut butter, egg, and vanilla extract. Mix until well incorporated.

  • Add dry ingredients to wet ingredients. 

  • Roll dough into one inch balls and place on baking sheet lined with parchment paper.

  • Flatten cookies with a fork in a criss-cross pattern.

  • Bake cookies for about 15 minutes (until crisp)

  • Allow cookies to cool completely on baking sheet. 

  • Make the ice cream sandwiches and wrap in plastic wrap. Let set for an hour in the freezer.
