strawberry lemonade bars

We made these lemon bars with a special glaze made from our strawberry preserves!



INGREDIENTS:

  • 2 cups all-purpose flour

  • 1/2 cup powdered sugar

  • 1 tbsp. salt

  • 2 sticks of unsalted butter, melted

  • 2 cups granulated sugar

  • 1/2 cup flour

  • 5 eggs

  • 3 egg yolks

  • 8-9oz. lemon juice

  • 2 tbsp. lemon zest

Glaze:

  •  1 tbsp. Taste the Fruit 1st Strawberry Preserves

  • 1 cup powder sugar

  • 2 tbsp. heavy cream

  • 1 tbsp. lemon juice

DIRECTIONS:

  1. Preheat the oven 350 F. Prepare 13 in. x 9 in. pan with cooking spray and cut out parchment paper to line the tin. Add cooking spray to the paper.

  2. In a large bowl, stir together flour, powdered sugar and salt.

  3. Add butter to the mixture and stir to form a soft dough. Then press into the bottom of the pan and freeze for 20 minutes.

  4. Bake for 22-25 minutes or until the edges are golden brown.

  5. Making filling.

  6. Whisk together granulated sugar and flour in a medium bowl.

  7. Add eggs, egg yolks, lemon juice and zest and whisk until smooth.

  8. Pour the mixture over the hot crust and return to the oven and bake for 20-22 minutes or until the center is set. Cool completely in the pan on a cooling rack.

Glaze:

  1. Mix all ingredients in a small bowl until all clumps are smooth.

  2. Apply to the lemon bars at your discretion.
