BBQ Pineapple Chicken Tacos

This recipe highlights our Soup Base, Chopped Garlic, and Pineapple Preserves.



INGREDIENTS:

  • 4 cups cooked and shredded chicken

  • 2oz. of prepared Savory Chicken Soup Base

  • 1 tsp. Chopped Garlic

  • 1 cup BBQ sauce

  • 2oz. of Taste the Fruit 1st Pineapple Preserves 

  • Salt and Pepper to taste

  • 12 small soft flour taco shells

  • fresh lime and cilantro for serving

  • Mexican cheese blend

DIRECTIONS:

  1. To Shred the chicken, cook over medium skillet for 4 minutes on each side. Then add prepared soup base and cover and simmer for 10 minutes. Add to a stand mixer and mix for 1 minute.

  2. Place shredded chicken, BBQ sauce and Pineapple Preserves in the same skillet. Season with salt and pepper.

  3. Stir well and bring to a simmer over medium to medium-high heat. Simmer for 5-10 minutes, stirring often, until juices have thickened and chicken is juicy and flavorful.

  4. Serve chicken filling immediately with warmed taco shells, lemon wedges, cilantro, and your favorite cheese
