Mother Marilyn’s Blueberry Muffins
This recipe features our new Mother Marilyn’s Blueberry Pancake & Waffle Mix. These muffins are hearty for breakfast but could also be enjoyed with a savory soup for dinner. The sweetness is subtle.

INGREDIENTS:
2 1/2 cup Mother Marilyn’s Pancake & Waffle Mix
1/2 cup milk
2 tbsp butter, melted
1/3 cup vegetable oil
2 eggs
3/4 cup sugar
1/2 cup fresh blueberries
RECIPE:
Grease or line muffin pan and preheat oven to 400 F.
Combine pancake mix, eggs, sugar, milk, butter, and oil in a large bowl. This makes a thicker batter.
Fill each muffin mold until 3/4 full. Press down into the mold.
Press in a layer of blueberries on top. We used about 3 blueberries for each muffin. Make sure the blueberries are pressed into the muffin well.
Bake for 12 minutes or until golden brown.
