Bread & Butter Fried Chicken Sandwich

Ingredients:
1lb chicken beast
Garlic Bread & Butter Pickle brine and pickles
Favorite oil for frying
1 cup all-purpose flour
2 tbsp. powdered sugar
1 tsp. salt
½ tsp. ground black pepper
2 large eggs
milk
sandwich buns
Instructions:
Firmly pound chicken with the smooth side of a meat mallet to an even thickness. Cut each breast in half and place in a plastic bag. Pour brine over the chicken and let sit for a few hours.
Mix dry ingredients in a bowl and whisk the eggs and milk together in a separate bowl.
Drain liquid from the chicken and rinse.
Heat oil in a large skillet.
Dip each piece of chicken into the flour mixture, then into the egg-milk mixture. Continue until reached desired breading consistency.
Deep-fry chicken. 3-5 minute one each side depending on thickness. Let rest on a rack for 5 minutes.
Make sandwiches to taste with condiments.
