Cheeseburger Casserole

This week’s recipe highlights our Hot & Sweet Cucumber Chips, Pepper Rings, and Chopped Garlic!



INGREDIENTS:

  • 1lb. ground beef

  • 1 large onion, chopped

  • 1 tbsp. Bell-View Chopped Garlic

  • 6 bacon strips, cooked and crumbled

  • 8oz of shredded cheddar cheese, divided

  • 4 large eggs, room temperature

  • 1 can (6 ounces) tomato paste

  • 1 cup half & half

  • 1 tbsp. Bell-View Worcestershire sauce

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

  • Hot & Sweet Cucumber Chips

  • Hot & Sweet Pepper Rings

  • Grape tomatoes

DIRECTIONS:

  1. Preheat oven to 350°. In a large skillet, cook beef, onion and garlic over medium until beef is no longer pink and onion is tender, 10-12 minutes, breaking up beef into crumbles; drain.

  2. Transfer to a greased 8 x 8 baking dish. Sprinkle with bacon and 4 oz of cheddar cheese. In a large bowl, whisk together eggs, tomato paste, half & half, tomato paste, Worcestershire sauce, salt, and pepper until well combined. Pour over beef mixture. Sprinkle with remaining 4oz. of cheddar cheese. Garnish with chopped grape tomatoes, Hot & Sweet Cucumber Chips, and Hot & Sweet Pepper Rings.

  3. Bake, uncovered, until set and golden brown, 35-40 minutes. Let stand 10 minutes before serving. Garnish with toppings as desired.
