Chocolate Orange Cookies
We made this Christmas cookie with our Orange Marmalade!

INGREDIENTS:
8oz. Bell-View Taste the Fruit 1st Orange Marmalade
1 stick unsalted butter
1 cup brown sugar packed
1 egg
1 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 tsps. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 tbsps. cocoa powder
1 1/2 cups powdered sugar
1/4 tsp. orange zest
3 tbsp. orange juice
1 cup semisweet chocolate morsels.
DIRECTIONS:
In a mixing bowl, cream together butter and brown sugar until light and fluffy.
Beat in egg, orange marmalade, and vanilla.
In another bowl combine flour, baking powder, baking soda, cocoa powder, and salt and stir or whisk until thoroughly mixed.
Gradually add dry ingredients to the creamed butter and sugar.
Refrigerate the dough for 2 hours.
Preheat oven to 325 degrees.
Use a cookie scoop to drop cookie dough onto the baking sheet about 2 inches apart. These cookies will spread.
Bake at 325 degrees for 17 to 20 minutes or until golden.
Transfer cookies to wire racks to cool. Let cool completely.
Freeze for 30 minutes.
Melt semi sweet chocolate in 30 second intervals in the microwave. (I did this twice). Continue until fully melted.
Take out frozen cookies and spread melted chocolate on the bottoms. Freeze again until set up.
Place powdered sugar, orange zest, and 2 tablespoons orange juice in a small bowl. Stir to combine.
Spread the frosting on the cooled cookies. Let set!
