Guinness Cake

This recipe features our Taste the Fruit 1st Orange Marmalade!

INGREDIENTS:

  • 10 tablespoons butter, melted

  • ¾ cup cocoa powder

  • 1 cup sugar

  • 1 ⅓ cup dark brown sugar

  • 1 cup Guinness stout

  • ¾ cup yogurt

  • 2 large eggs 

  • 1 tablespoon vanilla extract

  • 2 cups all-purpose flour

  • 1 ½ tsp. Baking soda

  • 1 tsp.  salt

    ICING:

  • 3 cups powdered sugar

  • 2 sticks of unsalted butter at room temperature

  • 3 tbsp. of whisky

  • 1/4 tsp. salt

  • 1 tsp. pure vanilla extract

  • ¾ cup Orange Marmalade 

     

RECIPE:

  1. Preheat the oven to 350°F. Butter and line with parchment a 9-inch cake pan. Set aside.

  2. In a large bowl whisk together the melted butter, cocoa powder, granulated sugar, brown sugar and the Guinness.

  3. Whisk in the yogurt, and then the eggs and vanilla extract until fully combined.

  4. In a separate bowl, combine the flour, baking soda, and salt. Whisk the flour mixture into the chocolate mixture until evenly mixed.

  5. Pour the batter into the prepared pan and bake for 45-60 minutes, until a skewer inserted in the middle comes out clean. Let the cake cool completely in the pan.

    Icing

  6. Combine all ingredients in a mixing bowl and mix with a hand mixer.
