Lemon elderberry cookies
We’ve created a marvelous recipe using our Taste the Fruit 1st Product line. Taste the Fruit 1st Thumbprints are the perfect addition to any holiday get together. If you’re from Southwestern Pennsylvania, you could add them to the cookie table at the next wedding you attend. Taste the Fruit 1st Thumbprints are a versatile recipe that you can take anywhere. Another use for Bell-View’s Taste the Fruit 1st Preserves.
RECIPE
INGREDIENTS:
1/2 cup unsalted butter, softened
3/4 cup sugar
2 tablespoons light brown sugar, packed
1 large egg
1 tablespoon lemon extract
2 tablespoons lemon zest
1 tablespoon honey
yellow food coloring, optional and as desired
2 cups flour
2 teaspoons cornstarch
pinch salt, optional and to taste
1 teaspoon baking soda
2 tablespoons lemon juice
Powdered sugar
Taste the Fruit 1st Elderberry Jelly (however much you want to fill)
DIRECTIONS:
Combine all wet ingredients in a mixing bowl with a hand- mixer.
Combine all the dry with the wet, mix until just combined.
Once combined, roll dough into little balls. Between 8-14 depending on cookie size.
Line baking sheets with parchment paper and place the dough balls on the cookie sheet.
Refrigerate for 3-4 hours.
Preheat oven to 350, bake for 11 minutes.
As soon as you take them out, thumbprint them and let cool.
Add a tbsp. of Taste the Fruit 1stElderberry Preserves to each thumbprint.
Let cool for 10 minutes, add a dusting of powdered sugar.
