Mediterranean Chicken Bowl

INGREDIENTS:
Chicken
1lb skinless chicken breast
2 tbsp. Olive oil
2 tbsp. Bell-View Lemon Juice
1/2 tsp. Salt
1/2 tsp. Pepper
1 tsp. Garlic powder
Serve with prepared Couscous made with prepared Bell-View Savory Chicken Base (according to package)
2 tbsp. Feta cheese
2 tbsp. Hummus
Top with any Bell-View Olive
Cucumber Salad
1 half of cucumber, diced
15 grape tomatoes, diced
1 bell pepper, diced
1 tbsp. Olive oil
1 tbsp. Bell-View Wine Vinegar
1 tbsp. Bell-View Lemon Juice
Dressing
3oz. of Bell-View Fried Peppers & Onions
5 tbsp. Bell-View Lemon Juice
1 tbsp. Bell-View Grade A Maple Syrup
2 tbsp. Bell-View Wine Vinegar
1 tsp. Bell-View Chopped Garlic
Fresh cilantro
DIRECTIONS:
Take chicken breast and place in a plastic bag with lemon juice, olive oil, salt, pepper, and garlic powder. Seal and let marinate in refrigerator for 2-8 hours.
Dice up veggies until there are into little bits ( I used a veggie chopper). Add olive oil, wine vinegar, and lemon juice to a container with veggies and mix. Let sit in refrigerator for 2-8 hours.
Add all dressing ingredients to a food processor and pour into a vessel of your choosing. Keep refrigerated.
Prepare Couscous with the broth that’s made from prepared Savory Chicken Soup Base according to instructions. Simply sub the water for broth.
Cook chicken over medium heat with olive oil, 4-5 minute on both sides (coking time varies due to thickness). Chop into piece before serving.
Assemble bowl and top with crushed feta, hummus, and pita chips!
