PB & J Ice cream sandwiches
Bell-View’s Taste the Fruit 1st Preserves is perfect for your morning toast but did you know that it could also be used for baking? We’ve adapted this recipe to make a decadent dessert that’s dangerous to keep around your house for too long! It’s sure to satisfy your sugar cravings!
Ingredients:
1 1/2 cup all-purpose flour 180g
1/2 cup butter unsalted, room temp
1 cup peanut butter
1/2 cup brown sugar, lightly packed
1/2 cup sugar
1 tsp vanilla extract
1 egg large, room temp
3/4 tsp baking powder
1 Quart of Vanilla Ice Cream
1 Jar of Taste the Fruit 1stStrawberry Preserves
Instructions:
Let Ice cream melt naturally, add to container.
Melt down Strawberry Preserves and add to the melted ice cream.
Let set in freezer for four hours (until solid)
Preheat over to 350F
Mix all dry ingredients together.
Cream butter and sugars together in a separate bowl then fold in peanut butter, egg, and vanilla extract. Mix until well incorporated.
Add dry ingredients to wet ingredients.
Roll dough into one inch balls and place on baking sheet lined with parchment paper.
Flatten cookies with a fork in a criss-cross pattern.
Bake cookies for about 15 minutes (until crisp)
Allow cookies to cool completely on baking sheet.
Make the ice cream sandwiches and wrap in plastic wrap. Let set for an hour in the freezer.
