peach cake
We made this summer cake with our Taste the Fruit 1st Peach Preserves!
INGREDIENTS:
8oz. Bell-View Taste the Fruit 1st Peach Preserves
1½ cups all-purpose flour
1½ tsps. baking powder
½ tsp. salt
¾ cup unsalted butter softened
1 cup granulated sugar
2 large eggs
¼ cup Greek yogurt
1 tablespoon vanilla extract
2 cups ripe peaches peeled, pitted, and sliced or chopped
DIRECTIONS:
Preheat the oven to 350F. Grease a 9-inch round cake pan with baking spray.
In a medium mixing bowl, whisk together dry ingredients (flour, salt, baking powder).
With a hand mixer and a large bowl, beat the butter on medium speed until creamy. Add the sugar and beat until light and fluffy, about 3 minutes. Add the eggs one at a time, scraping down the bowl and beating well after each addition. Beat in the Greek yogurt and vanilla.
With the mixer on low speed, gradually add the dry ingredient mixture until just combined.
Fold in peaches. Spread the batter into the prepared cake pan.
Bake for 45 minutes or until a wooden pick inserted into the center comes out clean. Let cool for at least 30 minutes.
Whilst cooling, add 8oz. of Taste the Fruit 1st Peach Preserves to small saucepan and let heat through. Once heated, pour sauce over cake.
Then sift powdered sugar on top of the peach sauce.
