Pickled Beet Humus

We used several Bell-View products for this recipe!



INGREDIENTS:

  • 5 Bell-View Pickled Sweet Beets

  • 1 can chickpeas drained

  • 2/3 cup tahini

  • 2-3 zest & juice lemons about 1/3 cup of lemon juice

  • 1 tbsp. Bell-View Chopped Garlic

  • 1/3 cup olive oil

  • 1 tsp. cumin

  • 1 tsp. kosher salt

  • 1 tsp. onion powder

DIRECTIONS:

  1. Combine the chickpeas, tahini, beets, lemon juice, garlic, cumin, and salt in the bowl of a food processor.

  2. With the motor running, slowly drizzle in the olive oil and blend until smooth.

  3. Taste and adjust seasoning as needed, adding more olive oil, lemon juice, garlic, cumin or salt as needed. I like mine extra garlicky and lemony!

  4. Serve with and crackers or chips! I recommend pita chips, but I couldn’t find any at the store.
