Pineapple Cashew Chews

We used our Taste the Fruit 1st Pineapple Preserves for this recipe!


INGREDIENTS:

  • 2 cup cashews soaked and drained

  • 10 pitted dates

  • 2 tbsp. Taste the Fruit 1st Pineapple Preserves 

  • 1/4 cup coconut shreds

  • 1 tsp vanilla extract

DIRECTIONS:

  1. Boil cashews for 30 minutes. Strain and let cool. 

  2. In a food processor, pulse together pitted dates, cashews, and vanilla extract into a pastey consistency.

  3. Pulse in lightly the pineapple preserves. 

  4. Once all ingredients are to a smooth texture- chill the mix for 20-30 minutes in the fridge to make rolling into balls easier

  5. Once dough has chilled, remove from the fridge and begin rolling into 1 inch balls.

  6. Lastly, roll in coconut shreds and freeze for more solidification.
