Smoked Sirloin Tip Roast

INGREDIENTS:

  • 3lb sirloin tip roast

  • 2 tbsp. Bell-View Yellow Mustard

  • 1/2 tsp. kosher salt

  • 1/2 tsp. black pepper

  • 1/2 tsp. paprika

  • 1/2 tsp. oregano

  • 2 tbsp. Bell-View Chopped Garlic

  • 1 tbsp. Bell-View Worcestershire Sauce

  • 1/2 cup Bell-View Hearty Beef Soup Base (prepared)

  • 1 jar of Bell-View Hot & Sweet Chopped Peppers & Onions

  • 1/4 cup sugar

DIRECTIONS:

  1. Begin by lightly coating the tip roast in Bell-View Yellow mustard. This is a binding agent, use enough to cover the tip roast to your liking. Add all seasonings to the outside of the tip roast except for the oregano.

  2. Smoke for 2 hours at 200 F.

  3. After smoking, cube tip roast and add to a cast iron skillet. In the skillet, add Bell-View Hot & Sweet Chopped Peppers & Onions, chopped garlic, hearty beef soup base(prepared), oregano, and Worcestershire sauce.

  4. Return to smoker to braise at 300 F for another 2 hours.

  5. Serve over mashed potatoes or on buns!
