strawberry jalapeno Chicken
This is an easy weeknight dinner that’s sure to satisfy your family.
INGREDIENTS:
4-5 chicken thighs
¼ tsp. salt
¼ tsp. pepper
1 tsp. garlic powder
1/2 cup vinegar
1/2 white onion, chopped
1 tbsp. avocado oil
1 tbsp. Bell-View Chopped Garlic
3oz. Taste the Fruit First Seedless Strawberry Preserves
2oz. Bell-View Hot & Sweet Diced Jalapeños
2 tbsp. chopped cilantro, fresh
4oz. of BBQ sauce
DIRECTIONS:
Add avocado oil to a pan over medium heat. Wash all chicken thighs and pat dry. Add salt, pepper, and garlic powder to both sides. Add chine thighs to pan and cook until golden brown on both sides.
Remove chicken from pan and place on a plate. Add chopped onion, preserves, diced jalapeños, and I tbsp vinegar to pan. Simmer onions for 10 minutes or until they become soft.
Add remaining vinegar and BBQ to deglaze the pan. Let simmer and add chicken back to pan to heat through thoroughly.
Serve with chopped cilantro on top and with your favorite vegetable.
