strawberry lemonade bars
We made these lemon bars with a special glaze made from our strawberry preserves!
INGREDIENTS:
2 cups all-purpose flour
1/2 cup powdered sugar
1 tbsp. salt
2 sticks of unsalted butter, melted
2 cups granulated sugar
1/2 cup flour
5 eggs
3 egg yolks
8-9oz. lemon juice
2 tbsp. lemon zest
Glaze:
1 tbsp. Taste the Fruit 1st Strawberry Preserves
1 cup powder sugar
2 tbsp. heavy cream
1 tbsp. lemon juice
DIRECTIONS:
Preheat the oven 350 F. Prepare 13 in. x 9 in. pan with cooking spray and cut out parchment paper to line the tin. Add cooking spray to the paper.
In a large bowl, stir together flour, powdered sugar and salt.
Add butter to the mixture and stir to form a soft dough. Then press into the bottom of the pan and freeze for 20 minutes.
Bake for 22-25 minutes or until the edges are golden brown.
Making filling.
Whisk together granulated sugar and flour in a medium bowl.
Add eggs, egg yolks, lemon juice and zest and whisk until smooth.
Pour the mixture over the hot crust and return to the oven and bake for 20-22 minutes or until the center is set. Cool completely in the pan on a cooling rack.
Glaze:
Mix all ingredients in a small bowl until all clumps are smooth.
Apply to the lemon bars at your discretion.
