Strawberry rhubarb Oatmeal Bars
Strawberry Rhubarb Oatmeal Bars are the cat’s meow! For this recipe, we’ve added our Strawberry Rhubarb Preserves as the main ingredient! Whether you have them for dessert or for your morning breakfast, these are sure to be your next springtime favorite!
INGREDIENTS:
1 1/3 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 1/3 cups rolled old fashioned oats
1/2 cup light brown sugar
1/2 cup sugar
3/4 cup butter, melted
2 tsp vanilla extract
1 ½ Jars of Bell-View’s Strawberry Rhubarb Preserves
1 tsp cornstarch
RECIPE:
Heat oven to 350 degrees.
Grease 9-inch square baking pan with nonstick cooking spray.
In large bowl, combine oats, flour, sugars, and baking soda.
Melt butter and add vanilla extract.
Press oatmeal mixture into greased pan.
Spread Strawberry Rhubarb Preserves over the oatmeal. Add cornstarch on top and mix.
Bake 50 minutes or until golden.
Transfer pan to wire rack and cool completely.
Cut into 16 bars.
